1/2 cup mushrooms, sliced (optional)
Instructions:
Step 1: Cook the Pasta:

Drain the pasta and toss it with a little oil to prevent sticking. Set aside.
Step 2: Prepare the Tandoori Sauce:
Heat oil or butter in a pan. Add chopped onions and sauté until golden brown.
Add minced garlic and grated ginger, and cook for 1-2 minutes.
Add tomato puree and cook until the oil separates.

Heat 1 tbsp oil in a pan. Add sliced onions, bell peppers, and mushrooms. Sauté until tender.
If using grilled chicken, add it to the pan and heat through.
Step 4: Combine Pasta and Sauce:
Add the cooked pasta to the tandoori sauce. Toss well to coat the pasta evenly.
Add the sautéed vegetables or grilled chicken (if using) and mix gently.
Cook for 2-3 minutes on low heat to let the flavors meld.
Step 5: Garnish and Serve:
Garnish with fresh coriander leaves.
Serve hot with a side of garlic bread or a fresh salad.
Tips for Perfect Tandoori Pasta:
For a smokier flavor, you can char the tomatoes on an open flame before pureeing them.
Adjust the spice levels according to your preference.
Use whole wheat or gluten-free pasta for a healthier option.
