Masala Pomfret:


1 pomfret

2 tsp ginger
3 cloves garlic
1 tbsp oil
1/2 tbsp turmeric powder
1 tsp red chilli powder
1 lemon juice


Mix ginger, garlic, oil, red chilli, lemon juice and turmeric in a blender. Make gashes in the pomfret and apply the masala evenly. Marinate for 15 minutes. Coat it with suji on both sides and fry until it turns golden. The suji ensures the crispyness of the fish. Enjoy sinful masala pomfret.

Fish Cutlet:
For the fish:

1 small piece ginger
2 green chillies
3 cloves garlic

For the base:
Bread crumbs
1  egg
2 garlic cloves
1 small piece ginger
1 chilli
A few leaves of mint
Salt, to taste
1 tsp turmeric
1 tsp red chilli powder
1 tsp saunf
1 bread slice
Juice of 1/2 lemon
1 potato, boiled and mashed
2 tbsp flour, to coat


Steam the fish in a pan with water, ginger, green chillies and garlic. Mix bread crumbs, egg, garlic, ginger, green chillies, fresh mint leaves, salt, turmeric powder, red chilli powder, slice of bread, oil and lemon juice in a blender. Add the steamed fish into the blender and grind again. Empty this mixture into a bowl and add one boiled potato. Mash this mixture well. Shape this into cutlets and coat it in some flour. Refrigerate for ten minutes and fry the cutlets. Serve piping hot.

Fish Fingers:
Fish cut into fingers

1 lemon juice
1 cup flour
2 eggs 
1/2 cup bread crumbs
1/2 cup popcorn 


Marinate the pieces of fish with salt, pepper and lemon juice for 15 minutes. Mix the popcorn and bread crumbs in a mixture. Roll the pieces of fish in flour, egg white and finally in the popcorn-bread mixture. You could bake or fry the fish fingers according to your preference.

Receiving a diagnosis of diabetes usually means a change in lifestyle and diet.  If you are like me--I have a terrible sweet tooth!--I had this mental image of all things sweet and good disappearing from my diet.  Imagine my surprise to discover this is not true.  In fact, doctors and nutritionists recommend eating fresh fruit.  And there are many ways to make delicious diabetic desserts.  As with all foods, we diabetics have to watch our portions and even more so with sweets.  Do not make this cheesecake and eat it all before bedtime!  But incorporated into a healthy diet, you should be able to enjoy it.  With its sugar-free ingredients and fresh fruits, it is healthy and tasty enough for anyone!
1 1/4 graham cracker crumbs*
1/4 cup Splenda granular
1/3 cup butter, melted
1 pkg (3-oz) sugar-free lemon gelatin mix
2/3 cup boiling water
2 bars (8-oz each) light cream cheese
6-oz. lite/firm silken tofu
grated rind of 1 lemon
juice of 1 lemon
1 cup sugar-free frozen whipped topping, thawed
Fresh fruit of your choice, optional
In a small mixing bowl combine the graham cracker crumbs, Splenda, and melted butter until mixed together well.  Using the back of a large spoon, press the mixture on the bottom and up the sides of an 8-inch springform pan.  Chill the crust for about ten minutes.
In a blender container mix the lemon gelatin mix and the hot water; slowly add in the cream cheese and the tofu.  Continue to mix until smooth.  Pour the mixture into a large mixing bowl and add the lemon rind, lemon juice and the thawed topping.  Pour into the prepared pan, smoothing the top.  Chill for 4 hours or more.  Before serving garnish with more whipped topping and fresh fruit/fruits of your choice, if desired.
*If you cannot use crumbs made from graham crackers, make your crumbs from sugar-free butter cookies or sugar-free vanilla wafers.

Stir fries are quick, and easy to prepare, that can be ready in just a few minutes for simple dinner or supper at home. Much like Chinese take-outs, this recipe will surely amaze your family with a new found ingredient in them. Let us begin cooking it now. SPINACH AND CHICKEN STIR FRY WITH RASPBERRIES: This light and refreshing meal is almost a perfect stir fry. Every ingredient is fiber rich like the quinoa and the rich antioxidant spinach, and is not only good for the entire family, but also amazingly delicious when tossed with the pomegranate vinaigrette and tart, with the juicy raspberries.


One half cup uncooked quinoa, rinsed well
One cup of chicken broth

A dash of garlic powder

One teaspoon of canola oil

Two chicken breasts, sliced into strips

Salt and pepper to taste
One half small red onion, sliced thinly
One bag of six ounces of baby spinach
One fourth cup of bottled pomegranate vinaigrette (or any other fruity salad dressing), buy this in supermarkets
One half cup of fresh or even frozen but thawed raspberries
Two tablespoons of chevre or feta cheese


Start by preparing the quinoa. In a small sauce pan, add the quinoa, the chicken broth and the garlic powder and heat it until boiling point. Then cover the pan and lower the heat to medium low and let it simmer until the quinoa is tender and all the broth are absorbed for about twelve minutes.

Reserve for serving.

In another wok, heat the canola oil on high heat on your American stove. Then season you chicken slices with salt and pepper and the garlic powder. Taste-test it and you can adjust the amount of salt and pepper according to your desire. 
Add the chicken to the wok and stir fry together with the onion until the chicken is cooked through all the way. And when it is almost done, add the salad dressing to the wok plus the baby spinach to the skillet and toss until the spinach is wilted for only about one minute. 
Divide the quinoa among plates and then top it with the chicken stir fry, the raspberries and the cheese. Serve while it is hot. This is a main dish and can go great with steamed rice too. Others enjoy this with beer.
