A dessert that bridges the gap between elegant and traditional very nicely, so if your
Dinner is an intimate one; this pie may satisfy all tastes.


3 large eggs
1 cup firmly packed light brown sugar
¼ cup light corn syrup
½ teaspoon baking soda
¼ cup good brandy or cognac
4 tablespoon (1/2 stick) butter, melted
5 ounces semisweet chocolate, coarsely chopped
1 cup coarsely chopped walnuts
Basic flaky pie crust pastry for a 9 inch single crust pie
Plain or lightly sweetened whipped cream grated chocolate or
Chocolate curls.

Preheat the oven to 325’F. in a medium size bowl, beat the eggs until pale and frothy.
Add sugar, corn syrup, baking soda, and brandy and stir the sugar is dissolved. Stir in
The butter, chocolate, and walnuts. Pour the filling into the pie bake for 40 to 45 minutes
Or until the filling is firm to the touch and the edge is golden brown.
Remove from the oven to a wire rack and cool completely before cutting. Serve with
Mounds of whipped cream sprinkled with grated chocolate or chocolate curls.
