Top class lobster soup
ingredients:
One 2-lp spiny or Atlantic lobster (two smaller ones), 2 tablespoons butter 1&half cup tomato puree 1 sliced lemon, 1 bay leaf, 2 chopped carrots, 1 stalk celery, chopped, 2 small onions, chopped, 1 tablespoon chopped parsley, 1 minced clove garlic, 2 tablespoons olive oil, salt, pepper.
Make a court bouillon with the water, half of the carrot, onion, bay leaf, sliced lemon, salt, and pepper
1) Simmer slowly, partially covered for 15 minutes. tie the lobster to a small board
2) then plunge into the boiling court bouillon.
3) cook for about 12 minutes and remove the meat. Return the shell to the broth and simmer for
an hour. Brown remaining finely chopped onion in the butter and oil
4)then the carrot and celery
5)stir in the parsley and garlic, then add the tomato
6)season with salt, and simmer slowly for 10 minutes. Add 3 cups of the stock flavored with the shells, strained.
7)And, off the heat, two-thirds of the lobster meat, shredded
8)Cook for a few minutes, stirring frequently
9)Just before serving, add the remaining meat, cut into thin slices.
Yield: 4 servings
